What follows is an interesting interview with the Cooking influencer.
1. Please Tell Us a Little About Yourself and How You Got Into Cooking.
My name’s Eb Gargano. I’m a professional blogger and I run 2 websites: easypeasyfoodie.com where I share easy, delicious, stress free, family food and productiveblogging.com where I teach other people how to blog and how turn their blogs into successful businesses.
I have 2 kids and 1 husband – they are my chief taste-testers and I can always rely on them to give me their (sometime brutally) honest feedback on my new recipes!
I have been cooking all my life. (My parents have photos of me helping my Dad make a Christmas cake when I was less than 2 years old!) I got into cooking in a more serious way when I was 14 and I wanted to broaden my repertoire beyond our tried and true family recipes.
My first job after university was in the wine trade – which obviously developed my palate even further (my taste buds actually have qualifications!) and I also worked for a high-end national food retailer… which further developed my passion for good food and cooking!
2. What Are Your Favorite Types of Recipes to Create and Share, and Why?
My favorite recipes to create and share are recipes which taste amazing, but are actually really easy to make. I’m firmly of the opinion that good food does not have to be complicated… and that quick and easy recipes do not have to be bland or boring!
3. How Do You Develop a Cooking Style That is Unique to You?
My unique cooking style is all about figuring out how to make recipes as easy as possible, without compromising on flavor.
I achieve this with rigorous testing to find the perfect balance between ‘minimum effort’ and ‘maximum flavor’ – I also work hard to figure out cheats and shortcuts to ensure a great end result without having to spend hours in the kitchen.
4. What is Your Favorite Type of Cuisine to Cook and Why?
Wow – that’s a tough one. I’m not sure I can choose. I love Indian food, Mexican food, Middle Eastern food, Asian food…
But I guess the cuisine that perhaps best embodies my easy-but-foodie philosophy is Italian food… Real Italian food is so often about just a few really good quality ingredients, cooked simply.
5. How Do You Stay Organized When Preparing Multiple Dishes at Once?
Most of the time, I try very hard NOT to put myself in a situation where I’m juggling multiple dishes. That’s why so many of my favourite dishes are one pots and traybakes. I love it when you can just throw a bunch of ingredients in a pot or pan and then let the oven do all the hard work!
But if I do need to prepare multiple dishes at once – for example for a dinner party or at Christmas, my secret weapon is my time plan! I will create a step by step time plan detailing exactly what I need to do and exactly when I need to do it. That way I always stay totally organized and in control.
You can see examples of my time plans on my website:
6. Can You Share Any Cooking Mistakes You’ve Made and How You Learned From Them?
I firmly subscribe to the opinion that there’s no such thing as mistakes, when it comes to cooking… it’s all about experimenting and trying things out… If they work, great! If they don’t, you learned something!
As a recipe developer, the biggest ‘mistake’ I make is that a new recipe I create doesn’t taste as good as I’d imagined… But that’s never a problem! My family and I will discuss as we eat it how to make it better and then I’ll make it again, and it will be better!
Sometimes it takes 2 or 3 goes to get a recipe ‘just right’, but it’s worth it for the end result – some of my best recipes started out as total disasters, but by tweaking and improving, they now taste amazing!
7. Can You Share Any of Your Favorite Restaurants or Chefs That Inspire Your Cooking?
My issue with celebrity chefs is, even though they often claim their recipes are ‘easy’, they are almost never battle-tested in a real home kitchen with real-life problems (getting interrupted by kids, tired after a stressful day etc.)
And they never seem to factor in the washing up (probably because they have a team to do things like that!), meaning so often their recipes use every pot, pan and utensil in the kitchen!
So I am inspired by celebrity chefs, but not in the way most people are… I am inspired to create truly easy recipes, that work in real life for real people in normal kitchens (and which don’t generate a mountain of washing up!) All my recipes are battle-tested in my home kitchen under real life conditions, so I KNOW they are truly easy!
8. What Advice Would You Give to Someone Who Wants to Improve Their Cooking Skills?
Cook lots of recipes, try new things and don’t be afraid of making mistakes! The more you cook, the better you’ll get at it. And also, find a good website which has lots of easy, fool-proof recipes, designed to work for regular people… er like my website, for example 😉.
9. What Do You Hope People Take Away From Your Blog, and How Do You Want to Inspire Them in the Kitchen?
Two things…
Firstly, that they CAN cook. So many people feel that they can’t cook, but when they try my easy peasy recipes, they realise that they absolutely can cook.
I’ve lost count of the number of people who have contacted me over the years saying something along the lines of “I am a rubbish cook but I made your recipe for X and it turned out really well / I’m so proud of myself / my family were really impressed / you’ve really boosted my confidence in the kitchen etc.” It makes me so happy to get messages like that from my readers!
And secondly, that it is totally possible to create delicious food even when you are super busy and just don’t have much time or energy to cook.
That’s why my website is full of recipes like one pots, traybakes, 30 minute meals, fill the freezer meals, plus a whole bunch of cheats and shortcuts… I’ve also created a 4 Week Easy Dinners Meal Plan with done-for-you shopping lists to make things even easier and to take the stress out of the planning and shopping too!
Ultimately, I want my readers to feel happy and confident in the kitchen, proud of what they’ve cooked and inspired to experiment and try new things they might otherwise have been too daunted to have a go at.
10. Can You Share Any Success Stories or Meaningful Experiences That Have Come From Your Food Blogging Journey?
The greatest success for me personally is turning my passion for food and cooking into a successful 6 figure business. When I first started out, I could never have dreamed of how successful my blog would be or how many people it would help!
To say blogging has dramatically changed my life would be an understatement! I now have a job I love, I get to work the hours I want to work, I don’t have a boss breathing down my neck and I get to help millions of people around the world – what could be better?
My own personal success with blogging led me to create my second blog productiveblogging.com to help others achieve those things too!
11. Can You Talk About Any Future Plans or Projects for Easy Peasy Foodie, and Where You See Your Blog Going in the Future?
My readers keep asking me for an Easy Peasy Foodie recipe book… so maybe one day I’ll do that! But my main plan for Easy Peasy Foodie is to keep on doing what I do best… publishing easy, delicious recipes for busy people who don’t have a lot of time or energy to cook but still want to eat well, and boosting my readers’ confidence in the kitchen.
Whether you’re searching for an effortless weekday meal or stress-free entertaining options, Eb’s culinary skill has got you covered, enabling you to delight your loved ones with minimal exertion.
